Dark Chocolate Tiramisu Torte

 

Chocolate gateau is soaked in a coffee amaro syrup,

layered with dark chocolate custard, hints of chocolate chunks and

crushed amaretti, and finished with a dusting of cacao nib powder.

​

Strawberry Maracuya Maize Torte

 

An heirloom corn sponge is soaked in a nixtamalized liquor syrup,

layered with fresh strawberries and maracuya mascarpone mousse,

topped with diced red fruits and a candied corn tuile.

​

Adult Coconut Tres Leches Torte

​

An Oaxacan aged rum cake is soaked with coconut milk, sweetened

condensed milk, and dulce de leche, all house made, layered with coconut

mousse, and finished with toasted coconut and white chocolate dust.
